Crafted in Kagawa Prefecture as an exclusive TOKKYU shoyu, the highest recognition for soy sauce in Japan. Aged 3 years in cedar barrels, traditionally double-brewed using a highly concentrated MOROMI mash, it delivers the most elevated umami that the Kamebishi brewery has ever produced at this age: a rich, dark, complex shoyu with a gentle saltiness, followed by a bright finishing note that gives it a playful lift

Paolo traveled to Kamebishi’s shoyu brewery to discover how it crafts one of the most expensive soy sauces in the world. There, he fell in love with its traditional methods and tasted a depth of flavor he had never experienced in any other shoyu
That visit sparked a collaboration with one shared ambition: to create Kamebishi’s most umami-rich shoyu yet. Together, they developed Paolo fromTOKYO Shoyu BLACK. Traditionally crafted from 4 natural ingredients, carefully aged for 3 years, it is a flavor born from shared passion, patience, and generations of craftsmanship
Since 1753, eighteen generations of the Kamebishi family have preserved the rare MUSHIRO KOJI method, a technique now practiced by no other soy sauce brewery in Japan. Artisans combine steamed Japanese whole soybeans with roasted Japanese wheat and koji culture, then spread the mixture across woven MUSHIRO mats. Over the next 4 days, they tend it entirely by hand, carefully monitoring the temperature even through the night. This slow, precise process cultivates the koji that draws out the ingredients’ natural sweetness and deep umami
4 natural ingredients, Soybeans, Wheat, Salt, and Water, gain extraordinary depth through SAISHIKOMI, double brewing. First, the koji is mixed with salt water to create MOROMI, a mash that ages for two years. It’s then pressed into KIAGE, a raw soy sauce, which is blended with a fresh batch of koji to create a second mash, building even deeper layers of umami. Exclusive, labor-intensive, and made only in limited batches
The double-brewed MOROMI then rests for 3 more years in cedar barrels inside a 200-year-old brewhouse. Around 230 varieties of native yeast live there, slowly shaping the soy sauce and drawing out a natural sweetness and aroma that only time can craft
Skilled artisans spread the 3-year-aged MOROMI onto cloths and stack them layer by layer for ASSAKU, a slow pressing process that separates the deeply flavored soy sauce from the remaining solids. A gentle heating process called HIIRE brings the flavor to its final form. Each bottle is then filled and labeled by hand, the final touch in a craft shaped by generations

Deep umami unfolds into gentle sweetness and rounded saltiness, with a full aroma that lingers. A subtle tang and a touch of bitterness add balance. Naturally thick from three years of aging, it finishes rich and mellow.
Use it mainly as a finishing touch, not as a cooking sauce (unless you want to).
Perfect with warm rice and a soft egg, chilled tofu,
sashimi, sushi, steak, chicken, grilled fish, udon, pasta, etc.
Unexpected: vanilla ice cream, ripe tomatoes, avocados, pizza, fried chicken.

50 mL is for savoring. A few drops go a long way, so a bottle lasts. It also makes the perfect gift for someone new to shoyu: an introduction to umami, Japanese craftsmanship, and Kamebishi’s traditional brewing methods, refined over 270 years. 200 mL is for the table. Use it more freely over rice, tofu, grilled vegetables, or steak, with enough left to share.
Shoyu BLACK is classified as Tokkyu shoyu in Japan, meaning it is the highest level of Soy Sauce produced. The Kamebishi brewery, for more than 270 years, has never taken a shortcut, staying true to their traditional Mushiro Koji shoyu brewing method it began using 18 generations ago. Its umami so concentrated that a few drops elevate any dish.
